Ingredients
For the Burger
- 8 Angel Bay Lamb Bites
- 8 dinner rolls
- 4 handfuls baby spinach leaves
- 8 cherry tomatoes, quartered
- Feta, crumbled
- Favourite mayonnaise
For the Relish
- 2 tbsp butter
- 400gm onion, cut into wedges and separated
- 3 garlic cloves, minced
- 2 tbsp red wine vinegar
- 2 tsp salt
- ¼ tsp black pepper, freshly ground
- 1 tsp white sugar
Method
Over a medium heat, melt butter in a saucepan and cook onion and garlic until tender, approximately ten minutes. Place vinegar, salt, pepper and sugar in saucepan and stir to mix. Continue to cook until consistency thickens, approximately ten minutes. Refrigerate until serving.
Cook lamb bites according to packet directions. Partly slice the dinner rolls in half horizontally, being careful to keep the buns attached to each other. Smear some onion relish on the bottom half of the bun and some mayonnaise on the top half. Place a lamb bite on the relish and top with the spinach leaves, cherry tomatoes and crumbled feta. Close the rolls and serve with hot wedges.
